This mod Extend the current Galaxy options size, It will allow you to choose from 30 to 10 000 star systems. Moreover the mod let you play with as many empires as you want, up to 99, and as many empire FE as you have.

Stellaris 2.+ is much heavier. You will need a good computer to load more than 2000 systems.
The base game does not have enough star names for more than 1 thousand stars. You can use one of this mod :
